In preparation for up coming menus and entertainment I have infused my Olive Oil with 3 different infusions so that I have on hand a quicker way to compliment dishes and freeing up my time as Christmas approaches. Many infusions can vary accordingly to your dishes these are just three I have quickly put together.
Citrus – Spicy – Herb Infusion
To compliment a variety of so many dishes.
For the following three oils
Wash and pat completely dry your herbs chilli and citrus.
Citrus – one each of Orange , Lemon, Lime peels no white pith – teaspoon peppercorns added to you finest quality olive oil (half to one litre depending on your choice – steep slowly for 15 – 20 minutes in saucepan over low heat stop heat if needed earlier – turn off and allow to cool for ten minutes than add to sterilised bottles.
Now I leave my ingredients in the oil for one day then I remove them using a strainer.
Than Re Bottle .
I make enough to last me two to three weeks than I make another batch so it’s fresh each time. It’s a quick process so no need to make lots at a time.
Chilli Infusion – 1-2 green and red chilli – 1-2 garlic cloves- peppercorns
Herb Infusion – sage -rosemary-thyme- peppercorns – garlic
