Pumpkin & Feta Muffins
These muffins are moist and delightful but very Moreish ….no sugar used for these as I wanted a savoury flavour and they turned out just as delicious.
Pre making the muffins either on the day or day before prepare :
Roast cubes of Pumpkin in Oven the allow to cool enough to handle.
Toss Cooked Pumpkin into Blender with cubes of Feta
Season Cracked Pepper and salt
Add 1 teaspoon each of Nutmeg, Paprika, Tumeric
Pinch of Cayenne Pepper then Blend until smooth.
I place in fridge to cool before using, overnight is fine in a covered bowl.
Recipe to making the Muffins
Into mixing bowl
2 Eggs
1 cup of purée Pumpkin and feta
1/2 cup olive oil
1 cup plain Greek yogurt
1 tblsn Chia seeds
Mix together wet ingredients then add sifted dry ingredients
2 cups of self raising flour
1/2 cup almond flour
Pinch salt
1 teaspoon each of baking powder, cinnamon , nutmeg.
Scoop (using ice cream scoop so all even) into greased muffin pan and bake for 10 -15 minutes on 170 deg depending on your oven.
I topped each muffin with a little of cooked pieces of bacon before baking this can be optional. Also you can add chopped chives to the mix if you wish. I didn’t do it in this batch but will do in the next one. I made enough pumpkin mixture to make several batches in varying recipes for the week. 🌿🌿🌿🌿🌿🌿🌿🌿🌿🌿🌿🌿🌿🌿🌿🌿🌿🌿
